THE UNIVERSE CASSEL2 years at Paul Manu in Paris, to learn the art of sugar, 6 years at Fauchon to explore the paths of Haute Pâtisserie, under the creative leadership of Pierre Hermé, then Pastry Chef of the famous House, and has since become his friend. Frédéric Cassel finally took up residence in Fontainebleau to open his shop and give free rein to his creativity and talent.
